Its flavor is bright, slightly tangy, and salty with subtle floral, citrus, and grassy notes, finishing with a mild sweetness. It’s versatile for pairings—delicious with honey, heirloom tomatoes, fresh herbs, olive oil, or fig spread, and complements wines like Sancerre or Sauvignon Blanc. The cheese won gold at the 2015 U.S. Cheese Championship and has earned accolades from the American Cheese Society.
