Add some color to your brunch table with these gorgeous striped chiogga beets. Grown by Driftless Organics, Viroqua, Wisconsin. They pair perfect with our sheep milk feta cheese, raw or roasted, in a fresh spring salad.

Shaved Chiogga Beet & Feta Salad

4 Chiogga beets, raw
1 lemon
2 ounces of feta, crumbled
¼ cup mint chopped finely
 cup slivered or chopped almonds (try our Marcona almonds)
salt and pepper
1 tablespoon of fruity extra virgin olive oil
Scrub and clean the chioggia beets. Slice very very thinly on a mandolin – be careful! Combine with feta, mint, almonds, salt and pepper. Toss with olive oil and lemon juice. -- recipe from miminewman.com
