Blakesville Creamery is a newly established goat dairy in Port Washington.
Afterglow came about when Blakesville's cheesemaker decided to use Wisconsin's own New Glarus Belgian Red Ale in the washing brine. This unique Door County cherry ale adds a subtle, fruity flavor and aroma to the rich farmstead goat flavor to triple the Wisconsin terroir.
Uses: Blakesville Creamery Afterglow cuts neatly into elegant portions for clean presentation on cheese boards or picnic platters. The burnished rind and dense, rich paste can stand up to assertive flavors without overpowering more delicate ones. For best flavor and texture, allow to come to room temperature before serving.
Pairings: Blakesville Creamery Afterglow pairs well with Wisconsin's fruity beers and ciders, brandy old-fashioneds, and medium bodied wines. Try it with crisp apples, summer sausage, and freshly baked bread of your choice.
